ULRIKA ELEONORA LINDSTRÖM

Lindström learnt how to make Västgötaost cheese after attending dairy school in Degeberga, and she used this knowledge when she joined the Old Town dairy in Burträsk in 1869 as a maid. According to legend, Lindström was supposed to be watching the curdling vat when she was distracted by her lover, causing her to keep reheating the curds. After it was left to age, the cheese was found to have a unique taste and so Västerbottensost cheese born, with Lindström’s recipe becoming a wellkept secret only known to a few people. Today, Västerbottensost cheese is still only made in Burträsk and it remains very popular in Sweden.
