MANY believe that rosé wine is a blend of red and white wines. In fact, this is illegal in France (except for Champagne, yet even here it is not common). Most rosé wines come from black grapes. After crushing, the skins are allowed to remain in contact with the juice for up to 24 hours, after which they are discarded. The longer the skins are left in contact with the juice, the more intense the colour of the final wine. If the skins are left throughout fermentation, you end up with red wine.
