Suggestion­s for drying bean seeds

I have grown several sorts of climbing French beans successful­ly for some years, but would really like to try to save some bean seeds for drying. Any I have tried to leave to dry on the plant have gone mouldy or not grown properly. Can you give me any suggestion­s? Theresa Byrne, West Cornwall

Virtually all varieties of French bean seeds can be dried and used as haricots. As yours were mouldy when you gathered them, I suggest that you counter this by removing some of the foliage to allow air to circulate more freely around your plants.

The best time to harvest bean seeds is when the pods are drying and discolouri­ng. Then, ideally, uproot the plants and hang them in a dry, frost-free shed, or spread them on trays to fully mature.

When dry, shell them and store them in airtight jars. Your beans will need soaking for a day before use.
