Nose: Butterscotch and candied dates sing alongside an oak frame. Some white cherry and milk chocolate after the first sip. Subtle herbaceous basil note.
Palate: Blast of light brown sugar and a mixture of wood notes and baking spices. The spice spikes into warm baked apples.
Finish: Powerful on the tongue staying sweet and dry on the finish
Comments: Opens nicely to brown sugar palate and would love a brown sugar Old Fashioned with this one. 8.8

Nose: Caramel and chocolate, followed by caramelized banana and even more chocolate. A trace of astringency signals the high proof.
Palate: The heat quickly vanishes to be replaced by the chocolate and caramel. Ripe apple accompanied by crushed nuts and cinnamon.
Finish: The caramel remains. This dries to sweet oak tannins and welcome warmth.
Comments: With water, the bananas become peaches and the chocolate into vanilla. Wonderfully complex. 9.0
