Perfect pint for smoked salmon

FYNE Ales and Loch Fyne Oysters have teamed up to create what they consider to be the perfect pint to go with smoked salmon.

Loch Fyne Oysters teamed up with Fyne Ale’s head brewer Malcolm Downie to test recipes that would bring out the flavour of the salmon.

The result is The Gose which is available at the Loch Fyne Oyster Bar and at Fyne Ales brewery. It will be available more widely soon.

Martyn Paterson, divisional director and deputy managing director at Loch Fyne Oysters Ltd, said: ‘Many of our customers and visitors to the restaurant and oyster bar are discerning beer drinkers and we wanted to offer a high quality beer to pair with our famous smoked salmon.

‘Fortunatel­y, we have a world-renowned craft brewery on our doorstep and our produce is connected through our unique location. Loch Fyne Oysters’ harvest is drawn from the pure waters of the loch.

Welcoming the collaborat­ion, Jamie Delap, managing director of Fyne Ales, said: ‘This beer draws its inspiratio­n from a traditiona­l German farmhouse-style wheat beer, Gose. This is a sour beer, and true to style, this top-fermented beer has been brewed with salt and coriander. We’ve added some fragrant lemongrass too, result- ing in a unique beer with light salinity and a zesty finish. This accentuate­s the clean, fresh flavour profile of Loch Fyne Oysters’ salmon. As the only farmhouse brewery in Scotland, Fyne Ales are uniquely placed to produce this farmhouse beer.
