Buran is the name given to a vast range of dishes extending from Spain to the Balkans as well as the Islamic heartland extending from Morocco to India. Its history is long and complicate­d and the legend behind the dish has many versions. My favourite legend is that Buran was the nickname of the princess who married the caliph of Baghdad in the 9th century and Buran has evolved from the special dish served at her lavish wedding celebratio­ns. In Afghanista­n this dish is known as Burani and it has evolved into a wide range of vegetable dishes served with a yoghurt-based sauce. Everyone loves this dish. My family enjoy it on its own with freshly baked nan, but it is equally good with a chalau or pilau.
