Michelin-starred chef brings gourmet touch to Horseshoes
GUESTS at The Horseshoes in Long Lane were delighted to welcome the head chef of a top Michelin-starred Edinburgh eaterie last Thursday.
Joe Taggart has worked at the famed Restaurant Martin Wishart for 10 years and brought a tantalising seven-course tasting menu with perfectly-matched wines for each course.
The restaurant has been selected as a finalist for the 5th Food Awards and won the accolade for Best Gastropub in the Midlands last year.
Last week’s menu featured beetroot and horseradish macaroons alongside haggis bon bon’s and a braised middlewhite pork cheek. This came with puy lentil dal, with a glass of Grand Cru Champagne from the celebrated House of Salon.
Guests got the chance to taste ceviche of halibut with mango and passion fruit, paired with a specially-selected Sauvignon Blanc Ana by Eradus, New Zealand.
Its fresh cut grass aromas and gooseberry flavours made for a light wine accompaniment.
Foie gras and apricot caramelised nuts and seeds were swift to follow, accompanied by Oloroso sherry jelly paired with Château Septy Monbazillac, Bordeaux, 2013.
This was designed as “a light and fresh combination of fruit, herbs, flowers and honey, offset by acidity and driven minerality”.
Also on the menu was Orkney lobster and langoustine ravioli, Swiss chard and lobster bisque with an accompaniment of Gavi di Gavi Fratelli Antonio e Raimondo, 2015.
Roast breast of Culzean partridge with braised cabbage, celeriac, girolles and Armagnac sauce completed the savoury collection.
A Pinotage Rhebokskloof 2015 Paarl, South Africa, was paired with the meal “as a ripe, full-bodied wine with a complex, smoky palate and savoury toasted notes underpinning its rich fruit character”.
To conclude the memorable evening, a blackberry and chocolate dessert with Valrhona caramélia chocolate crémeux and blackcurrant sorbet was served to guests. It was washed down with PX San Emilio Pedro Ximenez.
