Varani’s pride themselves on using the finest ingredients in the production of their ice cream such as using real Nutella in their Nutella version, and they import pistachios from Siciliy and amarena cherries from Bologna. Ricardo’s passion and pride is clear to see. He explains: “You simply cannot just go on a two- day course to a so- called ‘ Gelato University’ and come out the other side a Gelato Chef.
“If you want to be the best then you need to have talent, passion for perfection, and above all it’s got to come from the heart.”
2018 has been a busy year for Ricardo as he expanded his business with champion Kilmarnock fryer Mario Forte, formerly of The Golden Arrow, to open a brand- new fish and chip shop next door to his ice cream Forum in High Glencairn Street.
