Michelin star restaurant takes reservatio­ns for whole of 2018:

ANGLESEY’S only Michelin star restaurant is fully booked – for the entire year.

Sosban and The Old Butchers in Menai Bridge has secured a clutch of awards since it was opened by Stephen and Bethan Stevens six years ago, receiving the ultimate accolade of a Michelin star in 2016.

Its small dining room was already sold out until the end of June and now tables for the rest of 2018 have been snapped up within 48 hours of going up for grabs. But there is no complacenc­y from the owners.

“We never stand still. Steve is a perfection­ist so always thinks a dish can improve,” said Bethan. “With people coming back, what we then work to do is exceed their expectatio­ns again.

“What is nice is that the bookings give us that financial security for the year – it means we can plan our menus knowing what our budget is.”

She said they are always being inspired to develop new dishes by the things around them.

She added: “Steve is very visual and it can be a picture that inspires him. He then works to reflect that on a plate.

“It is also all about fantastic ingredient­s, and getting all you can from each ingredient.”

The restaurant has 16 covers and opens three nights a week, with a lunch service in the summer.

But, despite the huge demand, there are no plans to expand.

“We are not driven by lining our pockets, we want to create a dining experience and our drive is to keep improving what we do,” said Bethan.

And the big question, when do bookings open again?

“We will take bookings for the first six months of 2019 from September 16,” said Bethan.
