MASTERCHEF: THE PROFESSIONALS 8pm, BBC2

Six chefs face the skills test, with the first three cooking monkfish with a spicy tomato and roasted onion sauce for Marcus Wareing. The remaining three will create scotch eggs, made with quails’ eggs, for Monica Galetti. All contestants then have 75 minutes to cook their own signature dish.
