POTATO HASH

Fry cubed, cooked or drained, canned new potatoes in a pan sprayed with low-calorie cooking spray with some chopped tomato and red onion. Stir in some spinach until wilted. Season to taste and serve with cooked baked beans.

ONE-TRAY BIG BREAKFAST

On a large non-stick pan sprayed with low-calorie cooking spray,

fry 2 Slimming World Free Food Pork Sausages (available to buy in Iceland stores), until cooked through, 1-2 eggs, 2 portobello mushrooms, 3 back bacon rashers (all visible fat removed) and

tomato slices. Season to taste and sprinkle over some chopped fresh coriander to serve.

Tip: For a vegetarian alternativ­e, use 2 Linda Mccartney Vegetarian Red Onion & Rosemary Sausages

and chilled Quorn Vegetarian Bacon slices instead.

POACHED EGGS ON TOAST

Top 2 slices of wholemeal toast (from a small 400g loaf) with 2 poached

eggs and halved cherry tomatoes. Season to taste and serve with basil leaves, if desired.

SALMON SCRAMBLE

In a pan sprayed with lowcalorie cooking spray, scramble 2-3 eggs to your liking (just eggs, no need to add anything). Serve with strips of smoked salmon and blanched

asparagus spears.

PEACH MELBA OATS

In a jar or pot, add half of 40g plain porridge oats and top with some fat-free natural Greek yoghurt, prepared peach chunks and fresh or frozen raspberrie­s. Add the remaining oats and repeat the

yoghurt and fruit layers. Cover and chill overnight. Stir the layers together when you’re ready to eat.

SPEEDY CHEESY OMELETTE

Whisk 2-3 eggs with 40g grated reduced-fat Cheddar cheese and pour into a frying pan sprayed with low- calorie cooking spray. When it begins to set, scatter over some chopped fresh coriander. Flip the omelette to cook through fully, season to taste, and fill with wilted spinach or vegetables of your choice to serve.

BAKED OATS

Put 40g plain porridge oats, 3 level tbsp skimmed milk, 1 egg, ½tsp vanilla essence and ¼tsp ground cinnamon in a small, deep ovenproof dish. Mix well and cook in the middle of the oven for 20 mins, or until golden. Serve with a dollop of fat-free natural fromage frais

and some fresh diced peach.
