Rum butter-basted pineapple lollipops

Serves 4 Ready in 25 mins

30g butter

2tbsp demerara sugar

25-50ml rum, to taste

4 round slices of fresh pineapple, each about 2cm thick, skin cut away

CHOOSE YOUR SKEWER

Pre-soaked bamboo skewers, or similar

1 Mix together all the ingredient­s except the pineapple in a small metal bowl and pop it next to the coals to warm up. Once the butter has melted, stir to combine.

2 Thread the pineapple slices onto the skewers to make a lollipop and then grill over hot coals until starting to char and caramelise, turning occasional­ly.

3 Start brushing the sweet rum butter over the pineapple using a silicone pastry brush to build up a caramelize­d glaze. The pineapple should have started to soften too. Once charred and softened, remove from the heat and eat just like a lollipop! Who said the kids have all the fun?
