The ben­e­fits of the Mediter­ranean diet have been much talked about over the years, but one more ben­e­fit has just come to light in the fa­mous Ital­ian canal city of Venice. No, it isn’t the fish, nuts, beans, veg­eta­bles, fruits, and ce­re­als, but the es­sen­tial olive oil that’s the key in­gre­di­ent here. And it’s not so much a nu­tri­tional ben­e­fit as an en­vi­ron­men­tal one: all the used olive oil from all those Vene­tian trat­to­rias and pizze­rias is now be­ing re­cy­cled and re­fined into biodiesel to power the va­poretti, the city’s iconic wa­ter­buses. So as you en­joy your an­tipasto misto and your fe­gato alla veneziana in a lit­tle canal­side restau­rant, you’ll also be help­ing to keep the city mov­ing and re­duce its de­pen­dence on fos­sil fu­els.
