LILAC & NETTLE TEA
MAKE IT!
2 packed cups (about 4 handfuls)
of lilac flowers, greenery removed)
1 packed cup (about 2 handfuls) of
young nettle leaves
3 cups (750ml) boiling water
Freshly squeezed lemon juice
1 tsp (5ml) honey or maple syrup
Small nonreactive saucepan, fine-mesh
strainer, measuring pitcher
Method:
1. Put the lilac flowers and nettle leaves in the nonreactive saucepan and add enough boiling water (about 3 cups/750ml) to cover the plant material.
2. While the water is hot, add the lemon juice and your choice of syrup, and stir.
3. Allow the tea to cool naturally and leave for at least two hours a maximum of four hours before straining into pitcher, ready to make your mocktails.
