Make it!
Take a medium head of white cabbage, fully shredded, and sprinkle with 1 to 3 tbsp of sea salt. Knead with clean hands or pound with a potato masher until enough juice has been released to cover the cabbage. Pop in a jar, covered with the brine, and secure with an airtight lid. Leave at room temperature for two weeks, then refrigerate. Serve with burgers or in a salad for protection and strength.
