1 Pre­heat the oven to 180C/gas 4. Roast 1 red and 1 yel­low pep­per on a bak­ing sheet for 15-20 min, un­til soft and charred. Put in a bowl, cover with cling­film and cool. Re­move skin and seeds, and cut roasted pep­pers into strips.

2 Cut 250g cia­batta into 3cm pieces, put on a bak­ing tray and driz­zle with olive oil, then sprin­kle over a lit­tle salt and pep­per. Cook in oven for 10 min, un­til crisp and golden.

3 Soak a finely sliced red onion in a bowl of cold wa­ter with a pinch of salt for 10 to 15 min, then drain well.

4 Put 600g chopped, mixed toma­toes in a bowl with the roasted pep­pers, cia­batta, onion, 1tbsp ca­pers, 8 an­chovies, 1 crushed clove of gar­lic and 70g pit­ted olives, and toss the mix­ture to­gether.

5 For the dress­ing, whisk to­gether 2tbsp malt vine­gar and 4tbsp olive oil, and sea­son with a lit­tle salt and pep­per. Pour the dress­ing over the salad and mix well. Scat­ter over fresh basil leaves to serve.
