1 Preheat the oven to 180C/gas 4. Roast 1 red and 1 yellow pepper on a baking sheet for 15-20 min, until soft and charred. Put in a bowl, cover with clingfilm and cool. Remove skin and seeds, and cut roasted peppers into strips.
2 Cut 250g ciabatta into 3cm pieces, put on a baking tray and drizzle with olive oil, then sprinkle over a little salt and pepper. Cook in oven for 10 min, until crisp and golden.
3 Soak a finely sliced red onion in a bowl of cold water with a pinch of salt for 10 to 15 min, then drain well.
4 Put 600g chopped, mixed tomatoes in a bowl with the roasted peppers, ciabatta, onion, 1tbsp capers, 8 anchovies, 1 crushed clove of garlic and 70g pitted olives, and toss the mixture together.
5 For the dressing, whisk together 2tbsp malt vinegar and 4tbsp olive oil, and season with a little salt and pepper. Pour the dressing over the salad and mix well. Scatter over fresh basil leaves to serve.
