C Chicken goujons
Makes 10 Prep: 5 min Cook: 10 min
2 chicken breasts 3tbsp plain flour 1 egg, beaten 80g breadcrumbs 2tbsp olive oil 2tbsp pesto – we used Sacla Fiery Chilli Pesto 1tbsp mayonnaise
1 Slice the chicken breasts into long thin strips then place in a bowl with the flour and toss to coat. Dip each chicken strip into the egg, then into the crumbs to coat. 2 Heat the olive oil in a large frying pan and fry the chicken for 10 min, turning halfway, until golden and cooked through. 3 Meanwhile, in a small bowl, stir together the pesto and mayonnaise to make a dipping sauce.
