2 chicken breasts 3tbsp plain flour 1 egg, beaten 80g bread­crumbs 2tbsp olive oil 2tbsp pesto – we used Sa­cla Fiery Chilli Pesto 1tbsp may­on­naise

1 Slice the chicken breasts into long thin strips then place in a bowl with the flour and toss to coat. Dip each chicken strip into the egg, then into the crumbs to coat. 2 Heat the olive oil in a large fry­ing pan and fry the chicken for 10 min, turn­ing half­way, un­til golden and cooked through. 3 Mean­while, in a small bowl, stir to­gether the pesto and may­on­naise to make a dip­ping sauce.
