Sausage and but­ter­nut squash stew Serves 4 Prep: 15 min Cook: 45 min

8 lean pork sausages 350g but­ter­nut squash, de­seeded, peeled and cut into chunks 1 red onion, cut into wedges 395g can cherry toma­toes 100ml bal­samic vine­gar 400g can can­nellini beans, drained 2 rose­mary sprigs 1 Heat the oven to 200C/ Gas 6. Put the pork sausages, but­ter­nut squash and red onion in a roast­ing tin and roast for 30 min.

2 Take the tin out and turn the sausages and veg­eta­bles to en­sure that they cook evenly, then add the cherry toma­toes, bal­samic vine­gar, can­nellini beans and rose­mary sprigs.

3 Re­turn the roast­ing tin to the oven for a fur­ther 15 min un­til all the food is pip­ing hot.
