Spicy chicken with crispy red onions
A really easy way to perk up a pack of chicken thighs.
SERVES 4 PREP TIME 10 MINS COOK TIME 45 MINS
● 1tbsp coriander seeds
● 1tbsp mustard seeds
● 1tsp chilli flakes
● 75g natural yogurt
● 1tbsp garam masala
● 8-12 chicken thighs (depending on size)
● 4 red onions, thinly sliced
● Vegetable oil for shallow frying
● Rice, chopped parsley and lemon wedges, to serve
1 Heat the oven to 180C/ Gas 4. Put the seeds and chilli flakes into a hot pan and dry-fry for a few mins until toasted. Tip into a bowl and crush lightly.
2 Mix together the yogurt and garam masala, then add the seed mix. Rub the mixture over the chicken thighs and place in a shallow roasting tin lined with oiled foil. Season with salt and bake for 40 mins until golden and cooked through.
3 While the chicken is cooking, shallow fry the onions, in batches, until crispy. Serve sprinkled over the chicken with rice, chopped parsley and lemon wedges.
