Chilli meatball pasta bake
Pasta perfection, this will soon become a family favourite.
SERVES 4 PREP TIME 15 MINS COOK TIME 35 MINS
● 6 spring onions, finely chopped
● 2 garlic cloves, chopped
● 2 red chillies, deseeded and chopped
● 500g minced pork or chicken
● 1tsp dried mixed herbs
● 1tbsp olive oil
● 2x400g cans chopped tomatoes
● 1tsp brown sugar
● 300g fusilli pasta
● 4tbsp freshly grated Parmesan
1 Mix together the spring onions, garlic, chillies, mince and mixed herbs. Season and shape the mixture into 24 balls.
2 Heat the oil in a large frying pan, add the meatballs and cook for 2-3 mins until golden. Add the canned tomatoes and brown sugar and simmer for 20 mins until the meatballs are cooked through.
3 Meanwhile, heat the oven to 220C/Gas 7 and cook the pasta in a pan of boiling salted water for 10 mins until just tender. Drain, mix with the meatballs and sauce and transfer to a baking dish. Sprinkle with cheese and a grinding of pepper and bake for 10 mins until bubbling and golden.
