Prawns in lime, honey and chilli

Using a pack of cooked rice, you can have this flavour-packed all-in-one rice dish on the table in 15 mins!

COOK TIME 10 MINS

● 2tbsp sunflower oil

● 1 small red onion, sliced

● 200g pouch cooked basmati rice

● 200g cooked peeled prawns

● 8 spring onions, sliced

● 1tsp dried chilli flakes

● 1tbsp honey

● Finely grated zest and juice of 2 limes

● 50g salted peanuts, chopped

● Chopped fresh parsley, to serve (optional)

1 Heat the oil in a large, shallow pan or wok. Add the onion and cook for a few mins to soften. Add the pack of rice and stir-fry for 2 mins until hot.

2 Add the prawns, spring onions, chilli flakes, honey, lime zest and juice and stir-fry for 2-3 mins until hot.

3 Scatter over the peanuts and sprinkle with chopped parsley, if using.
