Mini-egg mug cake

Thanks to some microwave magic, you can be eating this delicious pud in under 10 mins.

SERVES 1-2 PREP TIME 5 MINS COOK TIME 3 MINS

● 5tbsp self-raising flour ● 5tbsp caster sugar ● 1tsp cocoa powder ● 2tbsp whole milk ● 1 egg ● 2tbsp sunflower oil ● Couple of drops of vanilla extract

● 6-8 mini chocolate mini eggs ● Cream, to serve (optional)

1 Choose a mug that is suitable for putting in the microwave, then put the flour, sugar and cocoa powder into the mug and stir until evenly mixed.

2 Add the milk, egg, sunflower oil and vanilla extract and stir well until the mixture is combined and smooth.

3 Drop into the mixture a few mini eggs, reserving some for decorating the top, and pop the mug in the microwave.

4 Set your microwave to its highest setting and cook for around 3 mins

– it should puff up and be cooked right through. Leave to cool for 5 mins, then top with the remaining mini eggs. Serve with a dash of cream, if liked.
