I did ev­ery­thing I was sup­posed to; I went to univer­sity, got a de­gree in mar­ket­ing and worked my way up to be­come a di­rec­tor. But I was 30 and I thought, ‘Is this it?’ I’ve al­ways been around food; it’s a hobby and my mum and brother are both chefs. My pipedream be­came a re­al­ity six months ago. The skele­ton on the wall was some­thing I spot­ted when I was on hol­i­day in Mex­ico. It in­spired the name and I even had it tat­tooed on me to spur me on.
