I did everything I was supposed to; I went to university, got a degree in marketing and worked my way up to become a director. But I was 30 and I thought, ‘Is this it?’ I’ve always been around food; it’s a hobby and my mum and brother are both chefs. My pipedream became a reality six months ago. The skeleton on the wall was something I spotted when I was on holiday in Mexico. It inspired the name and I even had it tattooed on me to spur me on.
