It takes a brave chef to leave behind one of the world’s most renowned restaurants. But Simon Martin said goodbye to the much lauded NOMA in Copenhagen to open in Ancoats, the burgeoning new star of Manchester’s dining scene.
What he has created with Mana is nothing short of theatrical perfection. Much more than food – Simon and his team offer up an unrivalled culinary experience - our judges looked hard to find a flaw... and found none. Dishes like peas, lacto plums and caviar and barbecued greens with dehydrated scallops and beeswax grace the menu. Mana is gaining global credit and the food world will be watching this month to see if Simon brings Manchester its first Michelin star.
‘This is the first award we have won and it’s an absolutely amazing feeling,’ said Simon. ‘To be recognised throughout the county is a big thing for us. I feel what we are doing is something special.
‘It feels pretty wonderful to see that other people agree with us and appreciate what we do at Mana. More people are going to know about us, too, and that is pretty exciting.’
