It takes a brave chef to leave be­hind one of the world’s most renowned restau­rants. But Si­mon Martin said good­bye to the much lauded NOMA in Copen­hagen to open in Ancoats, the bur­geon­ing new star of Manchester’s din­ing scene.

What he has cre­ated with Mana is noth­ing short of the­atri­cal per­fec­tion. Much more than food – Si­mon and his team of­fer up an un­ri­valled culi­nary ex­pe­ri­ence - our judges looked hard to find a flaw... and found none. Dishes like peas, lacto plums and caviar and bar­be­cued greens with de­hy­drated scallops and beeswax grace the menu. Mana is gain­ing global credit and the food world will be watch­ing this month to see if Si­mon brings Manchester its first Miche­lin star.

‘This is the first award we have won and it’s an ab­so­lutely amaz­ing feel­ing,’ said Si­mon. ‘To be recog­nised through­out the county is a big thing for us. I feel what we are do­ing is some­thing spe­cial.

‘It feels pretty won­der­ful to see that other peo­ple agree with us and ap­pre­ci­ate what we do at Mana. More peo­ple are go­ing to know about us, too, and that is pretty ex­cit­ing.’
