The latest craze for a unique foodie experience is forest dining, courtesy of photographer and stylist Amanda Farnese Heath and her company The Mad March Hare. Amanda has come up with the unusual concept of setting up tables in the middle of nowhere and cooking and partying the nights away – literally under the stars. Bookings have begun for their next experience in the magical forest near Tyninghame in East Lothian in early Autumn. The success of the Mad March Hare is proof that one should never give up on a dream and, as Amanda says, “It is a beautiful thing when a career and a passion come together”. She has also been able to showcase the talents of the local artisan producers of the area around Edinburgh which she is doing so much to promote. Her idea has proved to be not so mad after all!
