The main laven­der fields of Provence are cen­tered around the Luberon and the Ver­don plateau re­gions to the north of Aix-enProvence and Mar­seille, and to the east of Avi­gnon. The flow­er­ing sea­son in the low­lands is gen­er­ally from mid June to early July. Higher up on the plateau, around the town of Sault, the colder weather means the bloom­ing sea­son is slightly later, from early July to early Au­gust. The main vil­lages in the re­gion all host laven­der fes­ti­vals – the most well known is in Valen­sole on 15 July 2018 whereas Sault’s is on 15 Au­gust. There you will learn about the ver­sa­til­ity of laven­der and its use in per­fumes, can­dles, honey, ice cream and nougat.
