AVOID THE HOLIDAY BULGE

here’s nothing T like a holiday to put the spring back in your step. But, if you’re not careful, two weeks of tucking into all the delicious local food and drinking every night can play havoc with your waistline.
“Holidays away are all about enjoying yourself,” says nutritionist Dr. Marilyn Glenville (www. marilynglenville.com).
“But it’s also very easy to go from meal to meal, from sun lounger to cocktail – and, if you’re not careful, you can end up gaining a few pounds. But, if you make the right food and drink choices, you can still enjoy yourself and come home looking and feeling great.”
FILLET OF SALMON IN FRESH GREEN CHUTNEY
STEP 1 Put the chutney ingredients in a blender and whizz to a smooth purée, adding a little water if necessary – just a bit at a time. STEP 2 Cut the salmon into 4cm squares. Place in a bowl and sprinkle with lime juice, turmeric and a little salt. Leave to marinate in the fridge for at least 30-40 mins. STEP 3 Heat a grill until very hot. Combine a tablespoon or so of the chutney with a little oil and spread the mixture over the salmon pieces. STEP 4 Place them skin side up on a well-greased or nonstick baking tray and grill for about 5 mins, until the skin is well-browned. Turn and cook the other side for 3 mins. NAUGHTY TWIST
For the ultimate treat, turn this into a rocky roadstyle energy ball. Replace the cashew nuts with unsalted almonds, the goji berries with raisins or mini marshmallows, the sunflower seeds with chocolate chips and the agave nectar with golden syrup. Then roll lightly in cocoa powder.
