Cheesy broc­coli bake

Serves 4, ready in 30 mins 500g broc­coli flo­rets 8 spring onions, finely chopped 200g cherry toma­toes, halved or quar­tered 2 large eggs, beaten 200g low-fat nat­u­ral cot­tage cheese 3 gar­lic cloves, peeled and crushed 4tbsp finely chopped flat-leaf pars­ley 110g re­duced-fat Ched­dar cheese, grated STEP 1 Pre­heat the oven to 220°C/ gas mark 7. Cook the broc­coli in a large pan of salted boil­ing wa­ter for 2-3 mins. Drain and set aside. STEP 2 Add the spring onions and toma­toes to the broc­coli, mix well and spoon into an oven­proof dish. Whisk the eggs in a sep­a­rate bowl with the cot­tage cheese and gar­lic un­til smooth. Sea­son and add the pars­ley. Pour the egg mix­ture over the veg­eta­bles and stir briefly. STEP 3 Sprin­kle the cheese on top and bake for 15-20 mins, or un­til just set. Serve im­me­di­ately.
