Cheesy broccoli bake
Serves 4, ready in 30 mins 500g broccoli florets 8 spring onions, finely chopped 200g cherry tomatoes, halved or quartered 2 large eggs, beaten 200g low-fat natural cottage cheese 3 garlic cloves, peeled and crushed 4tbsp finely chopped flat-leaf parsley 110g reduced-fat Cheddar cheese, grated STEP 1 Preheat the oven to 220°C/ gas mark 7. Cook the broccoli in a large pan of salted boiling water for 2-3 mins. Drain and set aside. STEP 2 Add the spring onions and tomatoes to the broccoli, mix well and spoon into an ovenproof dish. Whisk the eggs in a separate bowl with the cottage cheese and garlic until smooth. Season and add the parsley. Pour the egg mixture over the vegetables and stir briefly. STEP 3 Sprinkle the cheese on top and bake for 15-20 mins, or until just set. Serve immediately.
