Aubergine & tomato curry
SERVES 4, READY IN 1HR (VEGAN) Low-calorie cooking spray 2 red onions, chopped 4 garlic cloves, sliced 4cm root ginger, peeled and grated 1 red chilli, deseeded and chopped 1/2tbsp ground coriander 1/2tbsp ground cumin 1/2tsp turmeric 1/2tbsp hot paprika 1tsp black mustard seeds 1tbsp tomato purée 6 large tomatoes, chopped 3 aubergines, cut into chunks Coriander and lime wedges, to serve
STEP 1 Spritz a pan with low-calorie cooking spray and fry the onions, garlic, ginger and chilli for 4-5 mins. Add the spices and cook for 1 min. Add 300ml water and purée. STEP 2 Add the tomatoes and aubergines, cover, then cook for 45 mins. Season, then garnish with coriander and lime wedges.
