Au­bergine & tomato curry

SERVES 4, READY IN 1HR (VEGAN) Low-calo­rie cook­ing spray 2 red onions, chopped 4 gar­lic cloves, sliced 4cm root ginger, peeled and grated 1 red chilli, de­seeded and chopped 1/2tbsp ground co­rian­der 1/2tbsp ground cumin 1/2tsp turmeric 1/2tbsp hot pa­prika 1tsp black mus­tard seeds 1tbsp tomato purée 6 large toma­toes, chopped 3 aubergines, cut into chunks Co­rian­der and lime wedges, to serve

STEP 1 Spritz a pan with low-calo­rie cook­ing spray and fry the onions, gar­lic, ginger and chilli for 4-5 mins. Add the spices and cook for 1 min. Add 300ml wa­ter and purée. STEP 2 Add the toma­toes and aubergines, cover, then cook for 45 mins. Sea­son, then gar­nish with co­rian­der and lime wedges.
