OATY BERRY AND GINGER SPEEDY ICE CREAM
YOU DON’T NEED MEAT TO MAKE A MEAL OF IT…
serves 4
● 100g organic jumbo oats
● 250g natural yoghurt
● 50g crème fraiche ● 4tbsp of stem ginger syrup ● 4 pieces of stem ginger ● 500g frozen mixed berries, plus a few extra to serve
STEP 1 Place the oats in a food processor and whizz up into a fine crumb.
STEP 2 Add the remaining ingredients to the food processor and blend until smooth. Add an extra splash of the ginger syrup to loosen the mixture, if required.
STEP 3 Pour into a container and place in the freezer for 10-15 minutes to firm up a little.
STEP 4 Scoop into bowls and serve with a few extra frozen berries, if desired.
