JAMES WONG’S CHILLI CON CARNE
STEP 1 Heat the oil in a large saucepan over a medium heat. Add the onions, red peppers and shiitake mushrooms and fry, stirring occasionally, until the vegetables soften and start to brown (the shiitake will kick out loads of water, so this will take about 30 mins).
STEP 2 Tip in all the remaining ingredients and stir well, breaking up the mince with a wooden spoon. Bring to a simmer and cook for 10 mins, stirring from time to time, until the mince is cooked through.
STEP 3 Serve with the rice, avocado, tomatoes, lemon wedges and grated cheese.
