STEP 1 Heat the oil in a large saucepan over a medium heat. Add the onions, red peppers and shiitake mushrooms and fry, stirring occasional­ly, until the vegetables soften and start to brown (the shiitake will kick out loads of water, so this will take about 30 mins).

STEP 2 Tip in all the remaining ingredient­s and stir well, breaking up the mince with a wooden spoon. Bring to a simmer and cook for 10 mins, stirring from time to time, until the mince is cooked through.

STEP 3 Serve with the rice, avocado, tomatoes, lemon wedges and grated cheese.
