CAULIFLOWE­R CHEESE

SERVES 4

● 1 large cauliflowe­r

● 1 mug frozen peas or broccoli florets

● 4 rashers smoked streaky bacon

● 284ml Elmlea single cream

● 1 tsp Dijon mustard

● 2 tsp Worcesters­hire sauce

● 150g Cheddar cheese, grated

● 2 large handfuls baby spinach, chopped

● 15g Panko breadcrumb­s

● Handful parsley, finely chopped

● 15g Parmesan cheese, grated

STEP 1 Preheat the oven to 180°C/160°C fan/gas mark 4. STEP 2 Bring a large saucepan of water to the boil. Break the cauliflowe­r into florets then cook in the boiling water for 5 mins. Drain well then tip into an ovenproof serving dish and sprinkle over the peas or broccoli.

STEP 3 Fry the bacon in a non-stick pan until crisp, then chop into small pieces.

STEP 4 For the sauce, gently warm the Elmlea in a saucepan. Once hot, but not boiling, add the Dijon mustard, Worcesters­hire sauce and Cheddar and stir with a wooden spoon until smooth. Stir in the spinach then pour all over the cauliflowe­r and scatter over the bacon.

STEP 5 In a bowl, mix the breadcrumb­s, parsley and Parmesan. Sprinkle over the cauliflowe­r and bake for 25 mins, until the breadcrumb­s are golden.
