First it was dehydrated goji berries, next came seaweed thins, and now it’s the watermelon seed’s time in the healthyeat­ing spotlight. We know – these usually discarded pips don’t sound like the most appetising or, let’s be honest, filling things to munch on, but a 28g serving boasts more protein (around 7.8g) than gym-bunny favourite cod (28g = 5g protein). They’re also rich in iron, magnesium and potassium to keep you energised. The only catch: they need to be roasted to unleash their full nutritiona­l value. Rinse seeds in a colander, sprinkle with olive oil and chilli flakes, then roast in the oven at 160°C for 10 minutes. Or then again, just pick up a pot of Mello’s chilli-roasted watermelon seeds (£3.49, Holland & Barrett). Easy.
