PRAWN KING
INGREDIENTS
✱ 400g brown rice
✱ 2 large carrots
✱ 1 tbsp honey
✱ 1 bunch of radishes
✱ 1 red onion
✱ 2 tbsp undyed pickled ginger
✱ 400g cooked cocktail prawns
METHOD
1 First up, cook the brown rice, drain and leave it to get to room temperature.
2 Next, peel the carrots, shave into ribbons and season with honey. Thinly chop the radishes, too, then peel and finely slice the onion.
3 Assemble with the brown rice as a base, topped with the carrot, radish, onion, pickled ginger, and cooked prawns. Finally drizzle with leche de tigre sauce (page 164). Roaring optional.
