straddling the chalky slopes of the south Downs, the 6,000-acre Wiston Estate Winery has been owned by the gorings since 1743. It was used to farm sheep and wheat until Pip married into the family in 1972 and planted a 16acre vineyard in 2006. Daughterin-law Kirsty tells us more…
Tell us about your wines… They’re a wonderfully pure and concentrated reflection of the chalk soils they’re grown on. from the moment the grapes are hand-picked, our juice is handled as gently as possible. We focus on sparkling wines as that’s what our climate and the soil lends itself to. Which product is best to toast with at Christmas? Our rosé 2014, which is fantastically full-bodied with spicy hints of redcurrant, ginger and cardamom. It pairs beautifully with roasted meats and game.
What’s the best thing about
the business? It’s great fun when people, who are sure they don’t like sparkling wine, fall in love with ours!
What do you love about being based where you are? Originally from london, not a day goes by when
I’m not thankful for being surrounded by beautiful rolling countryside.
What’s next for the estate? We are planning a big development to the winery and its surroundings. picnic hampers, pizza ovens, giant mazes and mountain bike routes, here we come!
