PEAR, CHICKPEA & GREEN LEAF SALAD WITH MAPLE HARISSA DRESSING
I love using fresh fruit in salads, and the intense sweetness of pears means they can stand up to much bolder flavours like blue cheese and, most valuable to me, chilli and spice. This is a great combination and the addition of chickpeas makes it ever so much more than a salad. The maple syrup and harissa work like magic to dress the ingredients, and I promise you, this is a wonderful addition to any table.
SERVES 4-6
50g rocket leaves 50g watercress 2 pears, halved, cored and thinly sliced
400g can chickpeas, drained and rinsed Handful of sunflower seeds, to garnish
1 Arrange the rocket leaves and watercress, pear slices and chickpeas in a large shallow bowl or on a large platter.
2 Mix all the dressing ingredients together in a jug or small bowl, then pour over the salad.
3 Sprinkle with the sunflower seeds to garnish and serve immediately.
