Red cabbage steaks for two
Super simple—but a pretty little starter. Cut a red cabbage through the core to create two steaks and fry them in foaming butter for several minutes on either side, depending on thickness, with rosemary, thyme and a clove of garlic. In a cup, whisk together a couple of tablespoons of extra virgin olive oil, a couple more of maple syrup and a squeeze of lemon, then pour this over the steaks in the pan. Sprinkle with chilli flakes and seasoning and serve.
Braised red cabbage with apples for Christmas
Finely slice a whole red cabbage and place it in a large saucepan, together with a couple of bay leaves, a cinnamon stick, three star anise, 250ml of chicken stock, three tablespoons of soft brown sugar, 75ml of applecider vinegar and two cored and sliced apples. Mix everything together and simmer for an hour, stirring every so often so it doesn’t catch. Serve hot with festive dishes.
