Swede hash browns with eggs and avocado

Coarsely grate two peeled medium potatoes, a large peeled swede and an onion. Place them all in a clean tea towel and squeeze out excess moisture. Season well. Heat oil in a large frying pan and add dollops of the mixture to it, flattening them down until browned, then flip over to brown the other side. Repeat with all the mixture and then serve with eggs to your liking, sliced avocado and scatter over fresh parsley.

Parmesan swede fries

Peel and cut two medium-sized swedes into slim fries. Place these in a bowl and drizzle over vegetable oil, season generously and toss so they’re all evenly coated. Tip them out onto a foillined baking tray in a single layer and roast for about 35 minutes in a hot oven, by which time they should be golden. Remove and toss with freshly chopped chives. Shake into a serving bowl and grate over some Parmesan. Serve immediatel­y.
