Tahini kale crisps

Add three tablespoon­s of tahini to a bowl with two tablespoon­s of lemon juice, salt, pepper and a splash of water. Whisk everything together, then massage into bite-sized pieces of kale (rib removed). Arrange them in a single layer on a baking tray and cook in a low-temperatur­e oven for 15 minutes.

Kale and apple salad

Take a couple of handfuls of kale (ribs removed and chopped into bite-sized pieces) and toss them with lemon juice and salt to soften. Dice a sweet apple, add it to a salad bowl, grate in a handful of Parmesan and add blanched, chopped almonds. Pour in the kale and mix everything together. Drizzle over extra virgin olive oil and a little apple cider vinegar. Toss well and enjoy.
