Soup it up
WHO cannot love cabbages (My favourite recipe, February 9)? Those large, dark outer leaves, too often cast out, are perfect for what I call my classic Spanish-type, onepot recipe with good chicken stock, chicken pieces, tomatoes, potatoes and some spicy chunks of chorizo. Simply serve the leaves, cut into thin slices and steamed to an al-dente bite, in a deep soup bowl with the pot’s steaming contents poured over the top. Angela Walters, Buckinghamshire
