Purple-sprouting broccoli tempura with aioli

Combine 75g of plain flour and 75g of cornflour. Pour in 250ml of soda water and mix until smooth. Dip in and coat the purple-sprouting broccoli before frying in an inch or so of vegetable oil until golden. Grate garlic into mayonnaise, add a squeeze of lemon and serve alongside.

Easy boiled eggs with purple-sprouting broccoli soldiers

Put the eggs into a saucepan and cover with cold water. Place over a high heat and, when the water is boiling, add a few spears per egg and set the timer for three minutes. Run the eggs under cold water to stop them cooking further. Cut off the tops of the eggs and dip in the spears to eat.
