Spring greens with pesto eggs

Slice spring greens into ribbons and drop them into a saucepan with melted butter. Add chopped spring onion, together with other greens, such as courgettes, peas or broad beans (have a fridge forage). Cook until soft and then add seasoning and a squeeze of lemon. Stir in cooked wholegrain rice and mix well to combine. Fry eggs by dropping them into a frying pan with a teaspoon of pesto beneath each one. Cook to your liking, then divide the rice between bowls and top each with a fried egg.

Speedy weeknight supper with garlicky spring greens

Hammer chicken breasts to tenderise them, scatter them with dried herbs and garlic granules and season well. Pan fry in butter and olive oil until browned and cooked through. Add a splash of white wine and a squeeze of lemon. Deglaze the pan and reduce by half before sprinkling with caper berries. Steam some spring greens and drizzle over olive oil, grated fresh garlic and seasoning. Toss well. Serve the chicken and spring greens with buttery parsley potatoes.
