4 thick cod fillets, skin on, each weighing about 170g (6oz)
2tbspn vegetable oil 1tspn sesame oil
2tbspn light soy sauce
1½tspn dry sherry
2tspn rice vinegar
A 5cm (2in) piece of fresh root ginger, cut into thin matchsticks
6 spring onions, shredded on the bias
4 sprigs fresh coriander
