Steamed cod with ginger and spring onion
I use a bamboo Chinese steamer, cheap and versatile. But a normal metal steamer, set atop a pan of bubbling water, is equally fine
Method
▶ Place the cod fillets on a plate that will fit into a steamer. Pour over the oils and set the plate in the steamer.
▶ As the fish begins to cook, combine all the other ingredients, except for the spring onions and coriander, in a saucepan and simmer for two minutes.
▶ Pour this mixture over the fish. Steam for 8–10 minutes. Sprinkle over the spring onions for the final two minutes.
▶ Lift the cod out of the steamer, garnish with coriander sprigs and serve with steamed rice.
