A seasonal pleasure to slowly savour this month, gathering wild garlic (Allium ursinim) is a lovely way to explore a woodland floor and the end result tastes delicious. Drift along under the tree canopy with a trug over your arm and pick young leaves while tender, before the plant begins to flower. It works well blended into pesto or wrapped around white fish for a simple supper. You can also freeze it, so the sharp springtime flavour can be enjoyed out of season.
