FRIED FETA WITH HONEY AND FRESH FIGS

Sometimes, the simple things in life are the best: delicious, salty, sour, warm cheese, drizzled with sweet honey and served with succulent figs.

300ML OLIVE OIL 400G FETA

75G PLAIN FLOUR 3 EGGS, BEATEN 4 FRESH FIGS, TORN 4-6 TBSP CLEAR HONEY

Heat the oil in a small frying pan. Cut the feta into large rectangles. Pat dry and dust in flour.

Dip three pieces into the egg and fry until golden on either side – it will take around a minute. Remove the feta and drain on kitchen paper while frying the remaining pieces. Serve immediatel­y with fresh figs and drizzle with honey.
