PICK THEM AT THEIR MOST TENDER IN EARLY SPRING, USING STURDY GLOVES TO STRIP THE YOUNGEST LEAVES TOWARDS THE TOP OF THE PLANT. BOIL INTO TEA, STIR INTO RISOTTO OR WILT AND BLEND WITH CREAM FOR A NOURISHING SEASONAL SOUP.
