GROWING IN MOSS UNDER ENGLISH BEECH AND SCOTTISH BIRCH TREES, THEY HAVE A SHORT SEASON THAT ENDS IN NOVEMBER, SO GATHER SOME NOW AND ENJOY THEIR PEPPERY TASTE IN OMELETTES OR SAUTÉED WITH GARLIC AND PARSLEY. TAKE CARE, HOWEVER, TO AVOID THE POISONOUS ORANGEY FALSE CHANTERELLE (WHOSE EDGES ROLL IN).
