Find & Foster has three methods of cider making, leading to a broad range of flavours and finishes:

KEEVED Involving a long, slow fermentati­on process that relies on the natural sweetness of the fruit, this technique results in a deep amber-coloured cider with a slight sparkle that showcases the flavour of the apples.

TRY Find & Foster Huxham 2019 (£19, store.claptoncra­ft.co.uk). Named after the orchard that provided the apples for this ‘earthy and complex’ blend, Huxham pairs well with crêpes.

METHODE TRADITIONE­LLE Made in exactly the same way as champagne, this cider is clear, crisp, dry and sparkling.

TRY Find & Foster Carter 2018 (£20, findandfos­terfinecid­ers.com). Combining wet-stone minerality and salinity with notes of pear, green apple and olive, this matches well with rich cheesy dishes like tartiflett­e or seafood.

PÉTILLANT NATUREL OR PÉT NAT Named after the french for ‘slightly sparkling’, Pét Nat only needs a year of fermentati­on, often with the apples’ skins, leading to a fruity, yet complex, dry cider.

TRY Find & Foster Snicket 2019 (£19, eatyourgre­ensleeds.co.uk). This zesty blend is described as tasting of smoky lemon sherbets. it goes well with fish and chips or other oily dishes.
