Making FLAVOURED BUTTER

WILD GARLIC

Mix two tablespoon­s of wild garlic leaves, a pinch of sea salt and a few drops of lemon juice to roughly 100g of butter. Great with pan-fried or chargrille­d steak or fish.

PECAN & BROWN SUGAR

Mix two tablespoon­s of toasted, chopped pecans, one tablespoon of brown sugar and a pinch of cinnamon into 100g of butter. Serve on warm pancakes or toasted crumpets.

DILL & LEMON

For the perfect accompanim­ent to all kinds of fish dishes, add a tablespoon of chopped dill and a generous squeeze of lemon to 100g of butter.
